The opt-out isn't self-service. Contact support directly, reference the clause quoted above and keep a copy of the response.
"we may use your information to analyze your use of the Epic Services, support auditing, and improve features, technologies, and processes, including by training machine learning technologies to detect and moderate illegal, harmful, toxic, and fraudulent conduct and content that violates applicable laws or our terms and policies."
