Does Standard Notes train on your data?
Standard Notes says its server holds your notes' metadata but cannot read their content, and states three separate times that it cannot decrypt what you write.
Your content is not readable to them

How we read it: Graded from standardnotes.com/legal/privacy, not from /privacy — the latter is a 383-word manifesto ("Stand For Privacy") and grading marketing copy is exactly what this grade forbids, however well the copy reads. The policy proper says the same thing three ways: the server "cannot read the content of your notes", "we cannot decrypt end-to-end encrypted content", and consequently "we are unable to provide decrypted copies of user data" — the last being a statement against interest, since it is about what they cannot hand over when asked. What the server does hold, and the policy says so in the quoted sentence, is metadata: creation and modification dates.

How to opt out of Standard Notes AI training
Plan by plan, from what Standard Notes's own policy says about refusing. Where it publishes the steps, they're listed here with the limits they carry. Where there's nothing to switch off, or nothing graded, this says so instead of inventing a menu path.
All plans
There is nothing to opt out of. Standard Notes's own policy says it can't reach the content, so training on it isn't something a setting controls.

Standard Notes is graded A, and a company that's earned that can say so with the verdict itself. The image below links back to this page and shows the live grade. If the grade changes, the badge changes the same day, wherever it's embedded. It's free and it isn't for sale.
